Zucchini Soup

Duration of Preparation: 30 minutes

INGREDIENTS:   3-4 medium to large sized zucchini 

1 medium onion
1 garlic clove
Clear chicken broth
1 pot light yoghurt
Dried mint

HOW TO PREPARE:

Chop all ingredients and place in a pot Add chicken broth until ingredients are covered (can be replaced or mixed with water for an even lighter meal) Place on medium-high heat for 25 minutes or until zucchini is tender Remove from heat and blend Add yoghurt to the batch and blend again Sprinkle with a dash of dried mint before serving
