Name and Type of Dish : Pumpkin Soup


1 kg pumpkin
2 carrots
3 tbsp butter
2 onions, sliced (white, brown, yellow)
2 garlic cloves , peeled, roughly cut
3 cups (750ml) vegetable or chicken broth/stock
1 cup (250 ml) water
Salt and pepper
1/2 - 3/4 cup (125 - 185 ml) cream
1 spring onion


Simmer the onion and carrots in the bottom of a large cooking pot in butter until onion is translucent
Add peeled pumpkin and stir for 6 minutes
Pour broth/stock and water into a pot and add the garlic
Boil rapidly until pumpkin is very tender
Use a stick blender or transfer to blender to blitz smooth
Add salt and pepper to taste
Add cream and garnish with slices of green part of spring onion
Serve with bread
