 Duration of Preparation: 5 Minutes

INGREDIENTS: 

4 cups arugula
½ cup candied walnuts
¼ cup goat cheese /cheddar
¼ cup sliced onions (optional)
1 cup pomegranate2 tsp
olive oil1 tsp
lemon juice
¼ tsp.black pepper
2 tbsp. pomegranate molasses
Candied Walnuts
½ cup whole walnuts1 tbsp
butter2 tbsp
white granulated sugar

HOW TO PREPARE: 

Candied Walnuts

 In a non-stick pan, combine walnuts, butter and sugar
Toss together until the butter has fully melted and the sugar has dissolved, about 5 minutes
Empty the walnuts on to parchment paper and separate them so they don’t stick together once they dry
Roughly chop 1/2 cup of candied walnuts
Wash the Arugula leaves and set aside to dryMake the dressing by mixing the freshly squeezed lemon juice with the olive oil and black pepper
Crumble the goat cheese/cheddar into little chunks
Combine the Arugula, pomegranate, onion, walnuts and goat cheese/cheddar and top with the dressing

Serve immediately
